This is a rough guide on how to make the best chili in the universe. I don't really follow recipies, I think that you should add spices and ingredients as needed. Thus making me a TERRIBLE baker, but a KICK ASS cook. Just ask any of my friends lucky enough to have had a taste. This is how I make Chili and succeed at being AWESOME.
I usually use bison in my chili, its lower fat and cholesterol than turkey and more flavorful for just a fraction of the cost more. A little over a pound can make about 4-5 servings. Yum. I use one pot, cuz doing dishes sucks. I start with a pot, heat it up on medium-hi flame and sautee the meat until its cook and most of the water/juice/fatty goodness have evaporated.
Sometimes I use onions or mushrooms or other veggies. It is really up to you. This is a low carb recipie so no beans will be used, but by all means, add them if you want them! Sautee that shiznit!
I then add a can of tomatoes, usually with some sort of spice combo, pepers, onions, chilies, etc...
2 tablespoons of tomato paste. Helps to add flavor and thicken it up.
1 cup of broth, I use BEEF, but anything will work. Its just to add liquid so that you can add some flavor and cook it down to make it thick.
These are the base spices you want to use. I don't really measure..... so, figure it out. I add more, but I can't give away ALL my secrets, now can I?
While I'm doing all this I roast a giant head of garlic. YUM! Heat the oven up to 400-450, chop off the top of the head to expose all the cloves, drizzle olive oil, sprinkle with salt. Here I have used BACON SALT! Why? Cuz its AWESOME! Let bake/roast for 40-50 minutes, until the cloves are mushy and come out easily.
Mash em up a bit and add them to the chili.
The SECRET INGREDIENT!!! Bourbon is the best but dark beers work great too. Different beers will make the chili taste different, so try all kinds! I have!
There you have it. Now, this stupifying concoction must, MUST simmer for AT EAST 3 HOURS! Yeah, you heard me. This ain't small time. We're doing it right! I usually simmer covered for 3 hours so that all the flavors mix and then uncovered for another hour so that it thickens up. And really, once you put it all together it does the work for you, so put it on and then go watch a movie, or do your hair, or play video games. I do all of the above.
This is the finished product!!!

I top with shredded cheese and sour cream. Add some hot sauce if you're nuts (ANDREW) or anything else you crazy kids can come up with. Experiment, use different ingredients, but ultimately, this is the intended result....
